2 pounds Brussels sprouts, washed and cleaned
¼ cup extra-virgin olive oil
sea salt and freshly cracked black pepper to taste
1 teaspoon red pepper flakes
1 cup finely grated Pecorino Romano cheese
½ medium lemon

Step 1

Bring a large pot of cold water to a boil. Add Brussels sprouts and cook until softened, 7 to 9 minutes, depending on size. Strain and transfer to an ice bath to stop cooking.

Preheat the oven to 425 degrees F (220 degrees C).
