3 tablespoons salt
1 tablespoon poultry seasoning

1 (3 to 3½ pound) broiler-fryer chicken, cut in half

An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C). Let rest for 5 to 10 minutes before slicing.
